Ingredients:
- 1/2 cup dates (pitted), soaked & drained
- 1/4 cup pistachios, shelled
- 1/4 cup pumpkin seeds
- ½ cup raw cashews
- 1/4 cup shredded coconut
- 1 tsp spirulina
- 1 tsp matcha powder
- 30g Mitchells Unflavoured Protein Powder
- 1 tsp Mitchells Daily Greens Powder
- 1 tbsp coconut oil (melted)
Instructions:
- Place the pitted dates in a small bowl and cover with warm water. Let them soak for 10–15 minutes to soften. Drain well before using.
- In a food processor, add the pistachios, pumpkin seeds, cashews, sprinkle of matcha and shredded coconut.
- Pulse until they break down into a coarse meal (small, crumbly pieces but not fully powdered). Set aside on small plate (for rolling).
- Clean out food processor and add the drained dates, shredded coconut, spirulina, matcha powder, protein powder, Daily Greens powder, and melted coconut oil.
- Process until the mixture becomes sticky and well combined, scraping down the sides as needed.
- If the mixture is too dry, add a teaspoon of water or extra melted coconut oil to help bind it.
- Scoop out small portions of the mixture (about 1 tablespoon each) and roll into balls using your hands.
- Roll each ball in the prepared coating mixture, ensuring they are evenly covered.
- If the mixture is too sticky, lightly dampen your hands with water.
- Place the bliss balls on a baking tray or plate.
- For a firmer texture, refrigerate for at least 30 minutes before serving.
