Say it with us... Bone broth isn’t just for winter! More than just a gut hero for cozy mugs, adding it to summer dishes lets you enjoy extra gut health support while going in for seconds. Our final Mitchells recipe of the year is one of those dishes that looks restaurant worthy , but is surprisingly quick and easy to whip up. Perfect for sharing with loved ones this summer, here’s our Rice Paper Roll Salad with Bone Broth!

Ingredients:  

  • 500g Chicken (Option to switch out for beef or prawns)
  • Sesame Oil
  • Coconut Aminos (optional)
  • 2 tsp. Bone Broth Powder
  • 1 Cucumber
  • 1/2 Red Cabbage 
  • 2 Carrots
  • 1 Capsicum 
  • 2 Spring Onion 
  • 2 Handfuls Coriander 
  • Chopped Peanuts 
  • Sesame Seeds 
  • Vermicelli Rice Noodles 

Peanut Sauce: 

  • 2tbsp. Olive Oil 
  • 1 Tbsp. Sesame Oil 
  • 1/3 Cup Peanut Butter 
  • 2 Tbsp. Rice Vinegar 
  • 2 Tbsp. Tamari 
  • 1 Tbsp. Honey 
  • 2 Garlic Cloves, finely chopped 
  • 1 Tbsp. Fresh Ginger, grated 
  • 2-3 Tbsp. Water 

Instructions:

  1. Prepare the Peanut Sauce by adding all ingredients to a blender. Blend on medium speed until smooth and creamy. Set aside.
  2. Heat a large frying pan over medium heat. Drizzle in sesame oil, a splash of coconut aminos (optional) and Bone Broth Powder. Add your choice of meat to the pan.
  3. Cook for approximately 6–8 minutes (depending on protein) until fully cooked through and golden brown. Remove from heat and set aside.
  4. Slice cucumber, red cabbage, carrots, capsicum and spring onions finely, set aside.
  5. Place the desired amount of noodles in a large heatproof bowl. Cover with boiling water and let sit for 4–5 minutes, or until the noodles are translucent and tender.
  6. Drain and rinse with cold water to stop further cooking.
  7. In a large salad bowl, combine the cooked rice noodles, prepared vegetables, and cooked protein.
  8. Drizzle the peanut sauce over the top and toss gently to coat everything evenly.
  9. Sprinkle with chopped peanuts, sesame seeds, and fresh coriander.
  10. Serve immediately and enjoy!
