Homemade Chunky ANZAC Granola Bites

Our twist on the classic ANZAC biscuit!

Make these crunchy, golden ANZAC chunks your go-to for snacking, topping your brekkie, or sneaking in a little protein boost. Smart snacking on the go, wherever you are this long weekend.

Ingredients: 

  • 2 cups oats 
  • 1 cup almond meal 
  • 1 cup desiccated coconut
  • 1/4 cup each of sunflower seeds, pumpkin seeds, and chia seeds 
  • 3 tbsp Mitchells Natural Vanilla Protein Powder
  • 1 tsp cinnamon 
  • 2/3 cup coconut oil 
  • 1/3 cup almond butter 
  • 2 tbsp maple syrup

Instructions: 

  1. Preheat oven to 180°C and line a baking tray with baking paper.
  2. In a large bowl, combine oats, almond meal, seeds, Vanilla protein powder, and cinnamon
  3. Add coconut oil, almond butter, and maple syrup. Mix well to combine
  4. Press the mixture firmly into the prepared tray (nice and compact, as if you were making the base of a slice)
  5. Bake for 15-20 minutes, or until golden brown
  6. Remove from the oven, break into chunks, and return to the tray.
  7. Bake for another 10 minutes or until golden and crisp. Keep a close eye on them!
  8. Remove from oven and let them cool completely before consuming
  9. Store in an airtight container, they will keep for 5-7 days.
