Our twist on the classic ANZAC biscuit!
Make these crunchy, golden ANZAC chunks your go-to for snacking, topping your brekkie, or sneaking in a little protein boost. Smart snacking on the go, wherever you are this long weekend.
Ingredients:
- 2 cups oats
- 1 cup almond meal
- 1 cup desiccated coconut
- 1/4 cup each of sunflower seeds, pumpkin seeds, and chia seeds
- 3 tbsp Mitchells Natural Vanilla Protein Powder
- 1 tsp cinnamon
- 2/3 cup coconut oil
- 1/3 cup almond butter
- 2 tbsp maple syrup
Instructions:
- Preheat oven to 180°C and line a baking tray with baking paper.
- In a large bowl, combine oats, almond meal, seeds, Vanilla protein powder, and cinnamon
- Add coconut oil, almond butter, and maple syrup. Mix well to combine
- Press the mixture firmly into the prepared tray (nice and compact, as if you were making the base of a slice)
- Bake for 15-20 minutes, or until golden brown
- Remove from the oven, break into chunks, and return to the tray.
- Bake for another 10 minutes or until golden and crisp. Keep a close eye on them!
- Remove from oven and let them cool completely before consuming
- Store in an airtight container, they will keep for 5-7 days.
